Mozart Cookies: marzipan, pistachios and dark chocolate

Chocolate cookie dough, a soft marzipan center and little pieces of pistachio: Mozart cookies are worth a little time at the kitchen counter. Finish them with dark chocolate, put the coffee on and save a few for the cookie tin.
Make the cocoa and almond dough
Beat the softened butter with the powdered sugar, vanilla sugar and salt until smooth, then mix in the egg. Combine the wheat flour, baking powder, cocoa and ground almonds separately, breaking up any cocoa lumps. Work this mixture into the butter just until a dough forms.
Cover and refrigerate until the dough is firm enough to shape. Do not taste it raw. Wash your hands and clean utensils and surfaces after handling raw flour and egg, before working with the baked cookies.
Wrap the filling and bake
Chop the pistachios finely and knead them into the marzipan. Divide into small, similar-sized portions. Flatten pieces of dough, enclose the filling and gently press the seams together. Keep an even layer of dough around each center rather than stretching it thin in places.
Arrange the cookies with space between them on a parchment-lined baking sheet. Bake in a preheated oven until the dough is baked through and the edges are set. Cocoa makes browning hard to see; the surface should no longer look wet. Check a cookie when cool enough to open: the dough around the filling should not be raw or pasty.
Let the cookies firm up on the sheet before moving them carefully to a rack. Cool completely before coating.
Finish with bittersweet chocolate
Chop the couverture and melt it gently in a dry, heatproof bowl over barely simmering water. Keep the bowl above the water and prevent steam or splashes from getting into the chocolate. Stir until smooth, then dip or drizzle the cooled cookies. Let the finish set.
Serve with a freshly made espresso doppio. Its concentrated coffee flavor pairs well with the sweet marzipan and dark chocolate.
For a glossy chocolate finish
If you want a shiny coating with a clean snap, temper the couverture using its manufacturer’s instructions. Simply melting it is enough to decorate, but does not guarantee the same gloss or firm finish.
Half-dipped or striped
Dip just one side for a distinct chocolate edge, or draw thin lines over the tops for a lighter coating. Both finishes leave some of the cocoa cookie visible.
Pack a small gift box
Once the chocolate is firm, arrange the cookies in shallow layers with parchment between them. A snug box keeps the decorations from rubbing against neighboring cookies during transport.
Frequently asked questions
Does the filling contain nougat?
This version uses marzipan and chopped pistachios. Nougat is not part of the filling.
What if the dough cracks while wrapping?
Very cold dough can be stiff. Let the working portion soften just enough to bend, then close any cracks gently. If it becomes sticky, chill it again.
How should I store the cookies?
Keep fully cooled cookies with set chocolate in a closed container somewhere cool and dry. Follow the storage guidance for your marzipan and couverture; keep the tin away from heat.
